The food-safety risk
FSSAI built RUCO because spent oil was re-entering kitchens. Cash collection with no destination is that old model. Brand restaurants cannot defend it.
The commercial risk
You also cannot prove ESG disposal or answer a QSR auditor. Informal rates look high until a seizure or a failed audit costs more than the extra rupees.
How to switch
List used cooking oil on BioTradX, compare authorised buyers, keep invoices. You can still have a preferred collector. You should not have an anonymous one.
